1Knead the dough for the outer covering of the puri.
2Mix 2 cups of wheat flour, 1 cup of maida, 1/4th tsp of turmeric, 1/4th tsp of salt and 2 tbsp of oil.
3Add 1 cup of warm water and knead well to form a soft dough.
4Add 2 tsp of oil and mix well.
5Cover the bowl with a kitchen towel and let it rest for 1 hour.
6For the filling (puran): Soak 1.5 cups of chana dal for 1 hour. Drain the water and add it to a pressure cooker with 1/4 tsp turmeric, 1/2 tsp ghee and 3 cups of water.
7Cook for three whistles.
8Drain excess water and mash the dal to make a smooth paste.
9In a pan, add the cooked dal, 1.5 cups of jaggery and mix well. Cook until the jaggery melts.
10Mash smooth and add 1 tsp of ghee and 1/2 tsp of cardamom powder.
11Mix well and let it cool slightly.
12Make small ball-sized portions from the dough.
13Roll out the puri to a thin disc, spread puran and seal it.
14Cook the puran poli on a hot tawa using medium flame, add ghee and flip over to cook both sides.
