2Chop your potatoes into cubes, throw into a large bowl, add olive oil and the seasonings (paprika, garlic powder, onion powder, salt and pepper).
3Toss until evenly coated, place on a baking sheet and bake on 400 degrees for 30-35 minutes.
4While your potatoes are baking, in a large pot add garlic and onions and sauté until fragrant.
5Add turkey and cook through before adding the seasoning combination (salt, pepper, cumin, paprika, chili powder, onion powder, garlic powder).
6Once both the potatoes and turkey are fully cooked, add your potatoes to the pot, add your shredded cheese, then fold together.
7Place your potato turkey mixture in a bowl and assemble with whatever topping you would like (avocado, tomato, pickled jalapeños, plain Greek yogurt, cilantro, shredded cheese).
