Directions
- 1Get a big pan over medium heat.
- 2Add the ground beef, diced onion and seasonings (salt, pepper, chili powder, cumin and dried cilantro).
- 3Cook until the beef is cooked through and the onions have softened.
- 4Add the minced garlic, rinsed rice, corn, black beans, Rotel, tomato sauce and chicken broth.
- 5Stir everything together until it comes to a simmer.
- 6Cover and cook for 15 to 20 minutes.
- 7Stir in some of your favorite cheese.
- 8Top with a little bit more cheese and pop in the oven for a couple of minutes to get it melted.
- 9Sprinkle on some Mexican confetti (cilantro) to make your party complete.
- 10Serve and top with sour cream, taco sauce, cilantro, and fresh pico & tortilla chips.

Tips
- You can have a confetti free party if you don't like cilantro because it tastes like soap.
