Chili

Directions
- 1Dice the yellow onion.
- 2Chop the red bell pepper.
- 3Add a few teaspoons of olive oil to a large Dutch oven set over medium heat.
- 4Add the diced onion, red bell pepper, garlic, and a few pinches of salt to the Dutch oven.
- 5Cook until the onions have softened, about 5 minutes.
- 6Add the ground beef and break it up.
- 7Pour in the spices: chili powder, ground cumin, ground coriander, ground paprika, tomato paste, canned tomatoes, diced green chiles, kidney beans, and beef broth.
- 8Stir until all combined.
- 9Bring the mixture to a simmer and lower the heat to low. Cover and cook for about 1 hour until all the flavors have married. Adjust salt to taste, adding an additional ¾ teaspoon of salt if needed.
- 10Preheat the oven to 350F.
- 11In a medium bowl, whisk together the cornmeal, all-purpose flour, brown sugar, baking powder, salt, and shredded cheddar.
- 12In a measuring cup, whisk together the buttermilk, eggs, and oil.
- 13Pour the wet ingredients into the dry ingredients and mix until combined.
- 14When the chili is done, transfer it to a casserole dish and smooth out the top.
- 15Add the cornbread batter in one even layer.
- 16Transfer to the oven to bake until the top is set, about 25 minutes, and the chili is bubbling.
- 17Brush the top with butter straight out of the oven.
- 18Serve with sour cream and sliced green onion.
