Directions

  1. 1Make the pepper mix by blending red bell pepper, tomatoes, onion, and scotch bonnet pepper.
  2. 2Set aside the pepper mix.
  3. 3Remove the skin and bones from the turkey thighs, then cut into bite-sized pieces.
  4. 4Season the turkey with salt, garlic powder, onion powder, paprika, chicken stock cubes, and pepper; mix well and let it marinate.
  5. 5Chop the red and green bell peppers, carrots, and onions.
  6. 6Heat up some oil in a wok or large pan and fry the seasoned turkey pieces in two separate batches to avoid overcrowding the pan.
  7. 7Remove the fried turkey from the pan.
  8. 8Add the onions and minced garlic to the pan and fry for a few minutes.
  9. 9Add the blended pepper mix to the pan and fry for a few minutes to get rid of the sour taste of the tomatoes.
  10. 10Season the sauce with salt, chicken seasoning cube, and pepper. Let it fry for about 10 minutes, stirring constantly.
  11. 11Boil spaghetti in salted water for about 6 minutes until cooked but not soft.
  12. 12Drain the pasta.
  13. 13Add the cooked pasta and a little pasta water to the pan.
  14. 14Mix well to combine the pasta and sauce.
