Miso Mushroom Udon

Directions

  1. 1Place a pot of water on the stove and bring to a boil.
  2. 2Gently lower the eggs into the boiling water.
  3. 3After boiling, transfer the eggs to an ice bath.
  4. 4Crack and peel the boiled eggs.
  5. 5Grind sesame seeds in a mortar and pestle.
  6. 6Mince the garlic.
  7. 7Chop the mixed mushrooms.
  8. 8Slice the spring onions.
  9. 9Heat oil in a frying pan.
  10. 10Add mushrooms to the hot pan and sauté.
  11. 11Add butter and minced garlic to the mushrooms and cook until fragrant.
  12. 12Pour single cream into the pan with the mushrooms and garlic.
  13. 13Stir in miso paste, mirin, and light soy sauce.
  14. 14Cook the sauce until it thickens.
  15. 15Boil udon noodles in a pot of water.
  16. 16Drain the cooked udon noodles.
  17. 17Add the udon noodles to the mushroom cream sauce in the pan.
  18. 18Stir the noodles well to coat them evenly with the sauce.
  19. 19Serve the miso mushroom udon in a bowl.
  20. 20Halve the soft-boiled eggs and place them on top of the udon.
  21. 21Garnish with chopped spring onions and ground sesame seeds.
