Sauté sliced onions, minced garlic, and minced ginger in butter until translucent.

Combine baking soda and water, add to the sautéed vegetables, and cook until browned.

Add grated apple and tomato paste, and cook for 3 minutes.

Add butter, flour, curry powder, and garam masala, and cook for 3 minutes.

Pour chicken stock and simmer until thickened.

Add soy sauce, honey, Worcestershire sauce, ketchup, and salt to the curry.

Blend the curry until smooth.

Pound pork chops to 1/2 inch thickness.

Season pork chops with salt.

Whisk eggs and milk together.

Dip pork chops in flour, egg mixture, then panko.

Fry pork chops in oil for 3 minutes on each side at 350°F. Season with salt after frying.

Slice the fried pork chops.

Serve the dish with rice, curry, tonkatsu, and Japanese pickles.
