Directions

  1. 1Preheat oven to 375°F.
  2. 2In a greased 9x13 dish, add orzo, broth, garlic, sun-dried tomatoes, and all seasonings.
  3. 3Stir the ingredients in the dish.
  4. 4Let the mixture sit for 5 minutes.
  5. 5Nestle chicken thighs on top of the mixture.
  6. 6Season the chicken thighs with salt and pepper.
  7. 7Scatter cream cheese cubes around the dish, do not stir.
  8. 8Cover the dish tightly with foil.
  9. 9Bake for 25 minutes.
  10. 10Remove the foil and stir the orzo around the chicken.
  11. 11Cover the dish again with foil.
  12. 12Bake for another 15-20 minutes until the chicken reaches 165°F.
  13. 13Rest the covered dish for 5 minutes.
  14. 14Stir everything together until the cream cheese melts into a sauce.
  15. 15Add spinach and let it wilt for 1-2 minutes.
