Balsamic Glazed Roasted Carrots

Directions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2Line a baking sheet with parchment paper.
  3. 3In a large bowl, toss carrots with olive oil, salt, and pepper.
  4. 4Spread them out evenly on the prepared baking sheet.
  5. 5Roast for 20–25 minutes, turning halfway, until tender and slightly caramelized.
  6. 6While the carrots roast, mix balsamic vinegar and honey in a small bowl.
  7. 7In the last 5 minutes of roasting, drizzle the balsamic mixture over the carrots and toss to coat.
  8. 8Return to the oven until glossy and sticky.
  9. 9Sprinkle with fresh thyme if desired and serve warm.

  • 1.5 tablespoons olive oil

  • 1 tablespoon honey or maple syrup

Tips

  • Cut carrots evenly to ensure uniform roasting
  • Use parchment or a non-stick baking mat to prevent glaze from burning
  • Don’t skip the flip—turning them halfway gives you that even caramelization

  • Add the glaze near the end so it doesn’t burn or become bitter
