Shallot & Apple Cheese Toasties

Directions

  1. 1Add 2 tablespoons of butter and olive oil to a frying pan on medium heat.
  2. 2Add the chopped shallots and diced apple to the pan.
  3. 3Sweat them down for about 5 minutes until softened.
  4. 4Add balsamic glaze, chopped sage, salt, pepper, red wine, and beef stock.
  5. 5Continue cooking on a low heat for about 10 minutes until caramelized and sticky, and the liquid has evaporated. Then remove from heat.
  6. 6Butter both sides of the bread slices.
  7. 7Add about 1 teaspoon of butter to a frying pan on medium-high heat and place two slices of buttered bread.
  8. 8Load half of the cooked shallot mixture onto each slice of bread.
  9. 9Top with 2 slices of mozzarella and 2 slices of cheddar cheese on each slice of bread.
  10. 10Place the second slice of buttered bread on top to form sandwiches and cover with a lid.
  11. 11Fry for approximately 2 minutes until golden, then flip and fry for a further couple of minutes with the lid on until the cheese is melted.
  12. 12Once ready, slice the toasties and enjoy.

  • 5 tbsp salted butter
  • 2 tbsp olive oil
  • 2 echalion shallots
  • 0.25 apple
  • 1 tbsp balsamic glaze
  • 3 fresh sage leaves
  • 1 pinch salt
  • 1 pinch black pepper
  • 0.125 cup red wine
  • 0.25 cup beef stock
  • 4 slices sourdough/white bread
  • 4 slices mozzarella
  • 4 slices extra mature cheddar

Tips

  • To help melt the cheese, add about 1 tbsp of water to the pan and cover with a lid to create steam.
