Sauté the finely chopped onions until soft and golden.

Set aside the onions to cool.

In a bowl, combine ground beef and pork.

Add the cooled onion, one beaten egg, panko breadcrumbs soaked in a bit of milk, salt, pepper, and a pinch of nutmeg to the meat mixture.

Mix the ingredients gently to combine without overworking it.

Add mayonnaise to the meat mixture and mix again.

Form the meat mixture into patties.

Sear both sides of the patties until they are nice and golden brown.

Set the patties aside.

Use the same pan to make your sauce.

Add two tablespoons of ketchup, one tablespoon of Worcestershire sauce, and one tablespoon of soy sauce to the pan juices.

Mix the sauce and pour it over the patties.

Serve the Hambagu patties with warm rice and shredded cabbage.

2 tbsp Ketchup
1 tbsp Worcestershire sauce
1 tbsp Soy sauce
Cabbage

Tips
Mayonnaise is commercially emulsified fat so it's going to actually help keep that meat juice inside while you cook it.
