1Prepare the Green Pea Filling: In a pan, add 1 cup of green peas, water, sugar, and salt. Let it boil for 5 minutes until the peas soften.
2Once boiled, mash the peas gently and set them aside.
3In a mixer jar, add ginger, garlic, green chili, coriander stems, fennel seeds, black pepper, and cumin seeds. Blend them together to form a smooth paste.
4In a pan, heat 1 tsp ghee and add a pinch of asafoetida. Add the boiled and mashed green peas to the pan and cook for 2-3 minutes.
5Add the following seasonings: salt, powdered sugar, amchur, garam masala, chopped cashews, and raisins. Mix well.
6Cook the mixture for another 2-3 minutes until well combined, and your green peas stuffing is ready.
7Prepare the Dough: In a bowl, combine the wheat flour, semolina, carom seeds, and salt.
8Add oil and water (1 cup + 1 tbsp), and knead to form a smooth, firm dough.
9Cover the dough and let it rest for about 15 minutes.
10Assemble and Fry: Divide the dough into small portions and roll each portion into a ball.
11Roll each ball into a small puri, place a generous amount of the green pea stuffing in the center, and seal the edges.
12Heat oil in a deep frying pan over medium heat.
13Carefully fry the stuffed puris until they turn golden brown and crispy.
