Pickled Red Onion

Directions

  1. 1Cut the onions from bottom to top and slice thinly.
  2. 2Separate the onion slices and place in a glass jar.
  3. 3Combine red wine vinegar, water, bay leaves, peppercorns, sugar, salt, and garlic cloves in a pot.
  4. 4Bring the mixture to a boil.
  5. 5Pour the hot pickling liquid over the red onions until the jars are filled to the top.
  6. 6Cover the jars with cheesecloth or a paper towel and refrigerate for a couple of hours or overnight.

  • 2 tsp peppercorns
  • 2 tbsp sugar
  • 2 tsp salt
  • 3 whole garlic clove

Tips

  • Slice the onions thin so they absorb more of the brine flavor.
