Cut the onions from bottom to top and slice thinly.

Separate the onion slices and place in a glass jar.

Combine red wine vinegar, water, bay leaves, peppercorns, sugar, salt, and garlic cloves in a pot.

Bring the mixture to a boil.

Pour the hot pickling liquid over the red onions until the jars are filled to the top.

Cover the jars with cheesecloth or a paper towel and refrigerate for a couple of hours or overnight.

2 whole bay leaf
2 tsp peppercorns
2 tbsp sugar
2 tsp salt
3 whole garlic clove

Tips
Slice the onions thin so they absorb more of the brine flavor.
A mason or glass jar works best.
The pickled onions can last in the fridge for about two weeks.
