Directions

  1. 1Heat neutral oil in a pan on medium-high heat.
  2. 2Add the roma tomato, green tomatillo, onion, and garlic cloves to the pan.
  3. 3Stir continuously for 5-8 minutes until the vegetables have a sear on all sides.
  4. 4Add the chile de arbol to the pan.
  5. 5Mix for 6-8 minutes, ensuring the chiles do not burn and infuse the oil to an orange color.
  6. 6Transfer the seared vegetables and oil to a blender once tomatillos are dark green and tomatoes are blistered.
  7. 7Add water and salt to the blender.
  8. 8Blend until smooth.

  • 4 tbsp neutral oil
  • 1 whole roma tomato
  • 1 whole green tomatillo
  • 1/2 whole white or purple onion
  • 1-2 whole garlic clove
  • 5-20 whole dried chile de arbol
  • 1/2 cup water
  • 1 tsp salt

Tips

  • Use 5 chiles for a little heat, 10 for a nice kick, 15 for spicy, and 20 if you love spicy.
  • Taste for salt at the end.
