1Add spaghetti to boiling salted water and cook for about two minutes less than you would normally.
2Add freshly ground pepper to a hot pan and heat for about 30 seconds until you can smell the pepper, then add 1/3 cup of water and stir for a minute until it reduces slightly.
3In a bowl, add pecorino and 1/3 cup of hot pasta water and stir to make a thick creamy sauce.
4Once the pasta is cooked, turn the heat back on the pan with the water and pepper. Add spaghetti and pecorino sauce; stir well so that the cheese emulsifies with the pepper water.
