Preheat the oven to 350F.

Butter a 9” round baking pan and sprinkle with sugar.

In a small bowl, mash together the butter, brown sugar and cinnamon.

Dollop the butter mixture into the bottom of the cake pan.

Layer the apples into the bottom of the pan.

In a bowl, whisk the flour, sugar, salt, baking soda and powder.

In another bowl, whisk the olive oil, milk, eggs, orange zest and juice and Grand Marnier.

Add the dry ingredients to the wet ingredients; whisk until just combined.

Pour the batter into the prepared pan and bake for 1 hour, until the top is golden and a cake tester comes out clean.

Transfer the cake to a rack and let cool for 30 minutes.

Run a knife around the edge of the pan, invert the cake onto the rack and let cool completely.

Garnish with powdered sugar.

4 TB unsalted butter
0.5 cup brown sugar
0.5 tsp ground Cinnamon
2 apples, peeled, cored, sliced into half-moons
2 C ap flour
1.75 C sugar, plus extra for greasing
1.5 tsp salt
0.5 tsp baking soda
0.5 tsp baking powder
1.33 C extra virgin olive oil
1.25 C whole milk
3 large eggs
1 TB orange zest
0.25 C fresh oj
0.25 c Grand Marnier
powdered sugar, for garnish

Tips
Don't go crazy layering the apples because they will float to the top.
