Directions

  1. 1Very lightly oil down your chicken breast.
  2. 2Season chicken breast with dried parsley, oregano, chili powder, garlic, paprika, and cayenne pepper.
  3. 3Salt the chicken directly with the exact amount.
  4. 4Get your pan hot, then add some oil.
  5. 5Lay in your beautifully seasoned chicken.
  6. 6Once the chicken has gotten nice and crusty, give them a flip.
  7. 7When the chicken is still raw on the inside, transfer them off to a sheet tray and let them finish in the oven as you make everything else.
  8. 8Lower the heat and deglaze with some lemon juice.
  9. 9Sauté lots of minced garlic and tomato paste or Calabrian chilies, cooking it down for a couple of minutes to take out that raw flavor.
  10. 10Add heavy cream, scrape down all that beautiful flavor and bring this to an ever so slight bubble.
  11. 11Toss in a little pasta water.
  12. 12Drop the heat to a low and add a lot of Italian snow (Parmesan cheese).
  13. 13Introduce your al dente pasta, ensuring every noodle is kissed with love.
  14. 14If you timed everything right, your chicken would have had some time to rest.
  15. 15Make some thin slices of chicken so they're easier to eat.
  16. 16Slide the chicken on top of your beautiful pasta.

  • 2 oz Parmesan cheese
  • 16 oz dry pasta (fettuccini)

Tips

  • Very importantly, get your pan hot before adding oil.
  • Cook tomato paste or Calabrian chilies for a couple of minutes to remove raw flavor.
