Chicken Bryan with Lemon Butter Sauce

Directions

  1. 1Melt butter in a pan.
  2. 2Add garlic and onion to the melted butter and soften, not brown, until the garlic turns the same color as the onions.
  3. 3Add lemon juice, white wine, salt, and white pepper to the garlic and onion mixture.
  4. 4Bring the mixture to a high temp and let it come to a boil, then reduce it.
  5. 5Turn the heat down when the sauce reduces and looks like oatmeal.
  6. 6Start folding in small pieces of softened unsalted butter into the sauce, stirring as you go to emulsify it.
  7. 7Add sliced sundried tomatoes and basil to the sauce and allow them to meld the flavors.
  8. 8Grill the chicken (or broil it in the oven).
  9. 9Top the grilled chicken with caprino cheese and serve with sauteed broccoli.

Tips

  • Use unsalted butter to avoid over-salting the sauce, as salt is already added to the base.
  • For a more potent pepper flavor, white pepper is recommended as it's the inside of a black peppercorn with the black removed.
  • If you don't want to grill the chicken, you can broil it in your oven.
