Cajun Chicken Alfredo

Directions

  1. 1Very lightly oil down your chicken breast.
  2. 2Season the chicken with dried parsley, oregano, chili powder, garlic, paprika, and cayenne pepper.
  3. 3Salt the chicken directly.
  4. 4Get your pan hot then add some oil.
  5. 5Lay in your beautifully seasoned chicken.
  6. 6Once the chicken has gotten nicely and crusty, flip it.
  7. 7When the chicken is still raw on the inside, transfer them off to a sheet tray.
  8. 8Let the chicken finish in the oven as you make everything else.
  9. 9Lower the heat and deglaze the pan with some lemon.
  10. 10Add butter to the pan.
  11. 11Sauté lots of minced garlic in the pan.
  12. 12Add a little tomato paste or Calabrian chilies.
  13. 13Cook down the tomato paste for a couple of minutes to take out that raw flavor.
  14. 14Add heavy cream to the pan.
  15. 15Scrape down all that beautiful flavor and bring it to an ever so slight bubble.
  16. 16Toss in a little pasta water.
  17. 17Drop the heat to low and add a lot of Italian snow (Parmesan cheese).
  18. 18Introduce your al dente pasta to the sauce.
  19. 19Make sure every noodle is coated with the sauce.
  20. 20Slice the rested chicken into thin pieces.
  21. 21Slide the chicken on top of your beautiful pasta.

  • 4 cloves minced garlic
  • 2 tbsp tomato paste
  • 1 pint heavy cream
  • 2 tbsp pasta water
  • 4 oz Parmesan cheese
  • 16 oz dry pasta
