2In a medium bowl, combine 1 ½ cups (180g) of all-purpose flour, 1 teaspoon of salt, and ½ teaspoon of baking powder. Whisk until well combined.
3Butter and flour your loaf pan. For easier removal, line the bottom with parchment paper.
4In a mixing bowl, add 1 cup (226g) of unsalted room temperature butter and cream it for 10 seconds.
5Add 1 cup (200g) of sugar and mix for a few minutes until light and fluffy. Scrape the bowl down several times.
6Crack 4 eggs into a measuring cup to check for shells and add them to the mixture one at a time, mixing for 30 seconds after each addition. Scrape down the bowl.
7Add 2 tablespoons of vanilla extract and mix until just combined.
8Add ½ cup (120ml) of sour cream and mix until just combined.
9Add the flour mixture to the wet ingredients and mix on low until just combined. Finish mixing with a spatula to ensure no flour streaks remain.
10Transfer the batter into the prepared pan and smooth the top. Bake at 350°F (175°C) for about 40 minutes, or until a skewer comes out clean.
