Cajun Blackened Salmon Salad

Directions

  1. 1Season two salmon fillets with salt, pepper, garlic, smoked paprika, and Cajun seasoning.
  2. 2Massage the seasoning and a little olive oil into the salmon until everything is combined and coated.
  3. 3Heat a hot skillet with a little olive oil and a little ghee (clarified butter).
  4. 4Pan sear the salmon fillets on both sides for about 3 to 4 minutes.
  5. 5Remove the salmon from the heat and set aside to rest.
  6. 6Dice up some fresh parsley.
  7. 7Dice up some fresh dill.
  8. 8Dice up a little bit of fresh celery.
  9. 9Dice up a little bit of red onion.
  10. 10Dice a few hot and sweet jalapenos.
  11. 11Add a couple of tablespoons of cream cheese, a tablespoon of mayo, and all the diced herbs and veggies to a bowl.
  12. 12Mix everything until well combined.
  13. 13Squeeze in a little fresh lemon for brightness.
  14. 14Toast a croissant.
  15. 15Assemble the salmon salad on the toasted croissant.
