Directions

  1. 1Pit all the cherries and set them aside, reserving the cherry pits.
  2. 2Toast the cherry pits fully.
  3. 3Add water to the toasted cherry pits and bring to a simmer.
  4. 4Add hibiscus to the simmering mixture for a floral note.
  5. 5Add star anise to the mixture and bring it all to a simmer.
  6. 6Add brown sugar to the simmering mixture.
  7. 7Forcefully bring the mixture to a simmer and taste to ensure it's well incorporated and thick enough to cover the cherries.
  8. 8Strain the hot liquid.
  9. 9Place the pitted cherries into clean jars that have been sterilized and kept warm from the oven at 350°F.
  10. 10Pour the hot liquid all the way to the top of the jars, making sure the cherries are submerged.
  11. 11Seal the jars very tightly.
  12. 12Flip the sealed jars upside down and place them in the fridge overnight to seal.
  13. 13Label the jars for future reference.

Tips
