Chop one onion and one red bell pepper.

Add olive oil and minced garlic to a pot on the stove.

Add the chopped onion and bell pepper to the pot and let the veggies get nice and soft.

Add ground turkey to the pot and brown it.

Season with salt, pepper, cumin, paprika, oregano, chili powder, and a pinch of cayenne.

Mix well.

Add two cans of drained and rinsed kidney beans, corn, crushed tomatoes, and veggie broth to the pot.

Give it a good mix.

Bring to a boil, drop down the heat, cover, and let simmer for about 30 minutes.

Serve in a bowl and top with avocado, cilantro, sour cream, and cheese.

1 can (15 oz) sweet corn, rinsed and drained

Tips
Feel free to use ground beef instead of ground turkey.
