Spicy White Bean Chili

Directions

  1. 1Chop one yellow onion.
  2. 2Add some olive oil to a pot and heat it.
  3. 3Add the chopped onion to the pot.
  4. 4Chop one jalape get that added in, removing some seeds if desired for less spice.
  5. 5Add the chopped jalape get that added in to the pot.
  6. 6Add three cloves of garlic to the pot.
  7. 7Add a 7-ounce can of diced green chiles to the pot.
  8. 8Add two cans of lightly drained fire roasted diced tomatoes to the pot.
  9. 9Season with salt, pepper, about a teaspoon of paprika, about a teaspoon of chili powder, and some cumin.
  10. 10Add two cans of rinsed and drained Great Northern beans and one can of rinsed and drained pinto beans to the pot.
  11. 11Add half a cup of Frank's RedHot hot sauce to the pot.
  12. 12Add two tablespoons of butter to the pot.
  13. 13Add four cups of veggie broth to the pot.
  14. 14Cover the pot and let it simmer for about 20 minutes.
  15. 15Add a few scoops (about three tablespoons) of cream cheese to the chili.
  16. 16Use an immersion blender to lightly blend the chili to thicken it up a little bit.
  17. 17Serve the chili in bowls and top with fresh cilantro.
  18. 18Serve with tortilla chips (specifically scoops).
