Peel and cube the sweet potatoes.

Add olive oil, salt, paprika, and garlic powder to the sweet potatoes and mix well.

Cook lean ground beef in a medium heat pan with olive oil.

Add garlic paste, chili powder, salt, paprika, and cayenne to the ground beef as it cooks.

Once the ground beef is browned, add chipotle adobo sauce and mix.

Set aside the cooked ground beef.

Add the seasoned sweet potatoes to the pan and toast for 2-3 minutes on medium heat.

Add fire roasted diced tomatoes, canned diced green chiles, garlic paste, and water to the sweet potatoes.

Let it simmer for about 20-25 minutes or until the sweet potatoes begin to soften.

Mix in the cooked ground beef.

Top with reduced-fat Mexican cheese.
