1Cover the bottom of a 9x13 baking dish with enchilada sauce.
2Scoop refried beans into the enchilada sauce, making as many scoops as you have chicken thighs.
3Add a chicken thigh on top of each scoop of refried beans.
4Season the chicken thighs generously with taco seasoning.
5In a mixing bowl, combine a block of softened cream cheese, a can of diced green chilies, a cup of shredded cheese, a quarter cup of jarred salsa, and a tablespoon of taco seasoning.
6Mix all the ingredients in the bowl until beautifully combined.
7Using a scooper, plop a scoop of the cream cheese mixture onto each chicken thigh.
8Spread the mixture out to completely cover the chicken.
9Bake in the oven at 350 degrees Fahrenheit for approximately 30 minutes.
10Once baked, remove from the oven and add a handful of shredded cheese on top.
11Return to the oven for a couple of minutes to melt the cheese and finish cooking the chicken.
12Remove from oven, and if you have green onions, throw them on top to make it look fancy.
13Serve with a bowl of homemade Spanish rice and add extra sauce from the casserole.
