Directions

  1. 1Prepare the Mexican rice: Mix 1 cup of water, 1 tsp of tomato bouillon, and 1 cup of instant rice. Stir and microwave for 5:30 minutes.
  2. 2Divide the cooked Mexican rice into three small glass bowls, 1/3 cup each, and mash with a fork.
  3. 3Add 1/2 cup of lean beef taco meat to each bowl.
  4. 4Mix rotel and queso, then add 2 tbsp of the mixture to each bowl.
  5. 5Sprinkle a tiny amount of shredded cheese on top of each bowl.
  6. 6Add 3 small pieces of Doritos to each bowl.

  • 1 cup instant rice
  • 1.33 cup Mexican rice
  • 0.5 cup lean beef taco meat
  • 2 tbsp rotel
  • 2 tbsp queso
  • 0.5 tbsp shredded cheese
  • 3 Doritos
