Slice chicken breasts in half lengthwise.

Add salt, pepper, onion powder, garlic powder, smoked paprika, and neutral oil to a bowl and mix.

Add chicken breasts to the marinade and mix well with tongs.

Slice the yellow onion.

Mince the garlic cloves.

Remove thyme leaves from the stem and chop them.

Chop the fresh basil.

Chop the sun-dried tomatoes.

Cook the marinated chicken breasts in more neutral oil in a pan until browned on both sides and cooked through.

Remove the cooked chicken from the pan and set aside on a wire rack.

Add sliced onions and butter to the same pan and cook until they start to brown.

Add minced garlic and cook for 2 minutes.

Add tomato paste and cook for 3 minutes.

Add AP flour and stir into the mixture.

Add white wine and stir until the sauce thickens.

Add chicken stock and whisk it into the sauce.

Add thyme, dry oregano, smoked paprika, and dry basil to the sauce and whisk in.

Simmer the sauce for 5 minutes.

Add cream, sun-dried tomatoes, and whole grain mustard, then whisk until combined.

Simmer the sauce for 10 minutes.

Cut the cooked chicken breasts into desired size pieces.

Cook the pasta in a pot.

Season the sauce with salt.

Drain the cooked pasta and add it to the sauce.

Add the cut chicken pieces to the sauce with the pasta and stir.

Add fresh basil and stir just before serving.

Serve the pasta, garnish with Parmesan cheese and additional fresh basil.

0.33 cup fresh basil

Tips
