Peel and slice the onions, ensuring the slices are not too thin to prevent them from becoming stringy.

Add the sliced onions to the crockpot.

Cut the butter into pieces and place them on top of the onions in the crockpot.

Set the crockpot to low and cook for 8 hours.

After 8 hours, switch the crockpot to high and cook for another 2 hours to achieve a more caramelized look.

Fill the jars with the caramelized onions, leaving a half-inch headspace.

Wipe the rims of the jars with vinegar.

Place the flats and rings on the jars, tightening them fingertip tight.

Load the jars into your canner.

Pressure can for 75 minutes, or water bath can for 3 hours.

Remove the jars from the canner and let them cool.

Tips
For Rebel Water Bath canning, process for 3 hours.
Make sure to stir every few hours if possible when cooking in the crockpot.
