Carmelized Onions

Directions

  1. 1Peel and slice the onions, ensuring the slices are not too thin to prevent them from becoming stringy.
  2. 2Add the sliced onions to the crockpot.
  3. 3Cut the butter into pieces and place them on top of the onions in the crockpot.
  4. 4Set the crockpot to low and cook for 8 hours.
  5. 5After 8 hours, switch the crockpot to high and cook for another 2 hours to achieve a more caramelized look.
  6. 6Fill the jars with the caramelized onions, leaving a half-inch headspace.
  7. 7Wipe the rims of the jars with vinegar.
  8. 8Place the flats and rings on the jars, tightening them fingertip tight.
  9. 9Load the jars into your canner.
  10. 10Pressure can for 75 minutes, or water bath can for 3 hours.
  11. 11Remove the jars from the canner and let them cool.
