2Dice or thinly slice two sweet potatoes and place them in a baking sheet.
3Drizzle with 1 tbsp of avocado oil and sprinkle with 2 tsp of taco seasoning.
4Bake for 20-25 minutes.
5While sweet potatoes are baking, prepare the bean mixture: In a bowl, combine 1 can of low fat refried beans, 2 chipotle peppers in adobe sauce (optional), 1/2 a lime juiced, a dash of salt, and a dash of pepper.
6Add 2 crushed garlic cloves to the bean mixture and mix well.
7Prepare the turkey mixture: In a pan, sauté 0.5 onion, 1 poblano pepper, and 1 red bell pepper until translucent.
8Add 1 lb of lean turkey and 2 tbsp of taco seasoning to the pan and cook until done.
9Once sweet potatoes are baked, layer the bean mixture on top.
10Next, layer the turkey mixture on top of the beans.
11Top with low fat mexican cheese and bake for another 10 minutes at 400°F until bubbly.
12Garnish with Greek yogurt or cilantro and serve.
