High-Protein Flatbread Pizza

Directions

  1. 1Add 250 grams (1 cup) of low-fat cottage cheese to a blender.
  2. 2Crack two large eggs into the blender.
  3. 3Add 1/2 teaspoon of garlic powder to the blender.
  4. 4Add 1/2 teaspoon of onion powder to the blender.
  5. 5Add a pinch of salt to the blender.
  6. 6Blend the ingredients until smooth but not liquid.
  7. 7Add three tablespoons of almond flour (or oat/coconut flour) to the blended mixture.
  8. 8Mix the batter with a spoon until combined.
  9. 9Pour the thick but spreadable batter onto a baking tray lined with parchment paper.
  10. 10Spread the batter out thinly with the back of a spoon to form a round flatbread.
  11. 11Bake in the oven at 180°C for about 25 to 30 minutes until golden.
  12. 12Remove the flatbread from the oven and let it cool slightly.
  13. 13Loosen the flatbread with a spatula.
  14. 14If the flatbread is too floppy, place it back into the oven for another 5 minutes.
  15. 15Spread pizza sauce over the baked flatbread.
  16. 16Top with cooked prawns, cherry tomatoes, and red onion.
  17. 17Add baby spinach and rocket on top.
  18. 18Sprinkle with light mozzarella cheese.
  19. 19Place the topped flatbread back into the oven for a final bake until the cheese melts and toppings are heated through.

Tips

  • Do not blend the mixture until it's liquid, just smooth.
