Directions

  1. 1Place the cubed pork into a ziplock bag.
  2. 2Add Naranja Agria (sour orange) to cover most of the meat in the ziplock bag.
  3. 3Season the pork with garlic salt, black pepper, and oregano.
  4. 4Add about 10 chopped garlic cloves to the pork in the bag.
  5. 5Release the air from the ziplock bag, seal it, and mix thoroughly to ensure the pork is well-coated with the marinade.
  6. 6Put the marinated pork in the fridge for at least 30 minutes.
  7. 7Add vegetable oil to a pan and heat it.
  8. 8Test the oil; if it bubbles instantly, it's ready.
  9. 9Add the marinated pork (masitas) to the hot oil in the pan.
  10. 10Pour any remaining marinade from the ziplock bag into the pan with the pork.
  11. 11Cook the pork for 30-35 minutes, mixing every so often to ensure it cooks evenly.
  12. 12Once the pork pieces have a nice brown color, remove them from the pan and place them on a plate lined with paper towels to absorb excess oil.
  13. 13Cut a whole onion in half and then slice it into strips.
  14. 14Chop about 9 garlic cloves.
  15. 15Add olive oil to a clean pan and then add the sliced onions.
  16. 16After a couple of minutes, add the chopped garlic to the pan with the onions.
  17. 17Season the onions and garlic with salt and pepper.
  18. 18Add the juice of one lime to the onions and garlic.
  19. 19Let the mojo (onion and garlic mixture) cook for a couple more minutes.
  20. 20Drizzle the prepared mojo over the cooked masitas to make them nice and juicy.
