Ruth's Chris Creamed Spinach Copycat

Directions
- 1Wash spinach and place it in a bowl.
- 2Microwave the spinach for 4-5 minutes.
- 3Chop the red onions.
- 4Drain out the water from the microwaved spinach using tongs.
- 5Roughly chop up the spinach.
- 6Start making the sauce by adding butter to a pan.
- 7Add chopped red onions and spices to the melted butter in the pan.
- 8Stir the ingredients in the pan.
- 9Pour cream into the pan and mix.
- 10Add the chopped spinach to the sauce.
- 11Mix the spinach into the sauce until well combined.
- 12Transfer the creamed spinach into mini cast irons.
- 13Add grated parmesan on top of the spinach in the cast irons.
- 14Top with nutmeg.
