High Protein Loaded Breakfast Burritos
Directions
- 1In a bowl, add diced potatoes, olive oil, salt, Italian herbs seasoning, onion powder, garlic powder, chilli powder, and smoked paprika. Mix well.
- 2Air fry or oven bake the potatoes at 200C/400F for 20-25 minutes (air fryer) or 30-35 minutes (oven), flipping halfway.
- 3While potatoes are baking, cook diced onions in a frying pan until they have some color.
- 4Add extra lean beef mince to the pan with the onions.
- 5Add Worcestershire sauce and the same seasonings used for the potatoes.
- 6Once the mince is cooked, add tomato paste and diced garlic. Mix and cook through.
- 7In a bowl, add eggs and blended cottage cheese. Mix well.
- 8Cook the egg mixture on low-medium heat, mixing gently every minute or so until cooked perfectly.
- 9Season the cooked eggs with salt and pepper.
- 10Warm a tortilla and evenly distribute the eggs, mince, and potatoes.
- 11Top with sriracha mayo and chives.
- 12Roll, toast, and repeat for the remaining burritos.

- 8 diced garlic cloves
- 15 eggs
- 100 g blended cottage cheese
- 10 large tortillas
- 25 g sriracha mayonnaise
