Italian Wedding Meatball Orzo

Directions

  1. 1Combine ground beef, egg, breadcrumbs, parmesan cheese, milk, basil, parsley, pepper and salt in a large bowl and mix until combined.
  2. 2Roll the mixture into 1 teaspoon round balls and place on a parchment-lined baking sheet or plate.
  3. 3Heat olive oil in a large sauté pan over medium-high heat.
  4. 4Add meatballs to the pan and cook for 8 minutes until brown on the exterior, stirring occasionally.
  5. 5Remove meatballs from the pan and set aside.
  6. 6Reduce heat to medium and add carrots, celery, onion and garlic to the pan, cooking for 4 minutes until vegetables begin to soften.
  7. 7Add frozen spinach, orzo, rosemary, black pepper, red pepper, and salt to the pan and sauté for 1 minute.
  8. 8Add chicken stock and cooked meatballs, reduce heat to medium-low, and stir to incorporate.
  9. 9Cover and cook for 10 minutes, stirring occasionally to prevent sticking.
  10. 10Remove from heat and stir in the parmesan cheese.

  • 1/2 cup parmesan cheese, grated
