Crispy Cheesy Beef Tacos

Directions

  1. 1In a bowl, add yogurt and light mayo, chili lime hot sauce, honey, these seasonings, and fresh parsley. Mix till smooth and creamy, then set aside in the fridge.
  2. 2Line a large sheet pan, add chopped bell peppers and onion with taco seasoning mix and avocado cooking spray. Mix well.
  3. 3Oven roast the vegetables for 15 minutes at 180C / 370F.
  4. 4Spread the lean ground beef over the veggies with more taco seasoning, tomato paste, and fresh coriander. Mix till well combined, flatten, then use a spatula to score. Spray the tray.
  5. 5Oven bake for just 6 minutes at 180C / 370F to partially cook the beef.
  6. 6Break up the beef, return to the oven for another 6 minutes until lightly crisp.
  7. 7Add a splash of water, then mix until juicy and delicious. Then remove the beef from the tray.
  8. 8Sprinkle paprika and cooking spray on the tray, then dip the tortillas in all the juices.
  9. 9Lay out the tortillas, fill generously with mozzarella and the juicy beef.
  10. 10Fold the tacos tightly.
  11. 11Oven bake for 12 minutes, flipping halfway until golden and crispy.
  12. 12Finally, serve with the honey chili lime sauce.
