Directions

  1. 1Remove the stems from the mushrooms.
  2. 2Heat some olive oil in a pan.
  3. 3Sauté garlic and onion until golden.
  4. 4Add in the mushrooms.
  5. 5Sprinkle in oregano and chilli flakes.
  6. 6Stir in tomato paste and tomato puree.
  7. 7Cook for 3 to 4 minutes until rich and fragrant.
  8. 8Stir in cream, plenty of Parmesan, fresh basil, and a splash of water.
  9. 9Garnish with more Parmesan and basil.
