2In a stand mixer bowl, combine 3 cups of all-purpose flour, 1/3 cup of sugar, 1/2 teaspoon of salt, 2 eggs, 4 tablespoons of melted brown butter and mix.
3Once the yeast mixture is foamy, pour it into the flour mixture in the mixer bowl.
4Use a dough hook to knead the dough until it comes together, then knead it by hand.
5Place the dough in a bowl, cover it, and let it rest for about an hour or two until it doubles in size.
6Meanwhile, make the filling by combining brown sugar, cinnamon, nutmeg, and cloves in a bowl.
7Make the icing by combining cream cheese and softened brown butter in a bowl.
8Once the dough has doubled, roll it out on a floured surface.
9Spread the softened brown butter over the rolled-out dough.
10Sprinkle the brown sugar mixture evenly over the buttered dough.
11Tightly roll the dough into a log and cut into slices to form the cinnamon rolls.
12Place the cinnamon rolls in a buttered baking dish, cover and let rest for 30 minutes for a second proof.
13Bake at 350°F (175°C) for 25 minutes.
14Frost with the cream cheese icing and enjoy!
