In a glass container, mix together one cup of soy sauce, one cup of water or dashi stock, and a half cup of sugar.

Chop two scallions, half an onion, and two jalapenos. Remove the seeds from the jalapenos; be careful when cutting them and wash your hands.

Add the chopped scallions, onion, and jalapenos to the soy sauce mixture.

Stir in one tablespoon of garlic and one tablespoon of sesame seeds.

Boil water in a wok, add eight eggs, and one teaspoon of salt.

Cook the eggs for six to seven minutes (six for runnier yolks, seven to eight for firmer yolks).

Remove the eggs and place them in an ice bath.

Peel the eggs and add them to the soy sauce mixture.

Marinate the eggs in the refrigerator for at least one hour, or until lightly brown.

Serve the marinated eggs over rice. Add a splash of sesame oil just before serving.
