1Mix together mayo, fresh chopped dill, diced pickles, pickle juice, lemon zest, lemon juice, salt, and black pepper for the homemade tartar sauce.
2Chill the homemade tartar sauce while you cook.
3Prepare the dry mix by combining 1 cup all-purpose flour, 1 tbsp Old Bay, and 1 tsp garlic & herb seasoning.
4Prepare the wet batter by combining 3/4 cup all-purpose flour, 1/4 cup cornstarch, 1 tbsp Old Bay, 1 tsp garlic & herb seasoning, 1/2 tsp cayenne pepper (optional), 1 tsp lemon pepper, and approximately 1 cup 7-Up, adding until a smooth batter consistency is reached.
5Dip the sliced cod in the dry mix.
6Then dip the cod in the wet batter.
7Fry the battered fish at 375°F for 3–7 minutes until golden and crispy.
8Toast 4 buns.
9Add 4 slices of cheese to the toasted buns and melt the cheese.
10Add the crispy fish to the buns with melted cheese.
11Slather the homemade tartar sauce onto the fish.
12Slice the fish sandwich in half and enjoy.
