Directions

  1. 1Chop jalapeños and remove seeds, then place them into a bowl.
  2. 2Take the bottom off the peppers.
  3. 3Add two pounds of ground beef to a pot over medium-high heat and spread it across the bottom, letting it develop a crust.
  4. 4Once the meat browns at the bottom, flip it over and chop it up.
  5. 5Drain excess fat from the meat using a paper towel.
  6. 6Add peppers and onions to the pot.
  7. 7After 4 to 5 minutes of cooking the veggies, add garlic and cook until fragrant.
  8. 8Add about 3 tablespoons of tomato paste.
  9. 9Season with nature seasoning, smoked paprika, Italian seasoning, and about a quarter teaspoon of everything Italian seasoning.
  10. 10Add fire roasted tomatoes and two cups of rinsed rice, then mix everything.
  11. 11Pour in 4 cups of beef broth.
  12. 12Allow the mixture to come to a gentle boil.
  13. 13Put the lid on and reduce the heat to low.
  14. 14Cook for 18 to 20 minutes until the rice is fully done.
  15. 15Once the timer goes off, cut the heat and let it sit to steam for 5 to 10 minutes.
  16. 16Sprinkle freshly shredded cheese on top.
  17. 17Put the lid back on until the cheese completely melts.
  18. 18Garnish with fresh parsley.
