Marinate the chicken breast (or thighs) in buttermilk and a mixture of Cajun seasoning, red chilli powder, salt, oregano, onion powder, garlic powder, black pepper, and baking powder.
In a separate bowl, mix the dry ingredients: all-purpose flour, cornstarch, Cajun seasoning, onion powder, garlic powder, salt, red chilli powder, and black pepper.
Prepare the creamy coleslaw by combining thinly shredded cabbage, carrots, onions, salt, black pepper, and plain mayonnaise.
Toast the burger buns.
Dunk the marinated chicken breast in the wet mixture, then in the dry mixture, then again in the wet mixture, and finally in the dry mixture.
Fry the breaded chicken until crispy.
Assemble the burger by layering spicy mayonnaise, tangy pickle, crispy fried chicken, creamy coleslaw, and hot sauce on a toasted burger bun.
