Serves 1

Directions

  1. 1Pick an oversized coffee mug or a larger ramekin.
  2. 2Add one egg, about one and a half tablespoons of milk, one tablespoon of peanut butter, a quarter teaspoon of vanilla extract, a teaspoon of maple syrup, a quarter teaspoon of cinnamon, and a pinch of baking powder to the mug.
  3. 3Mix all ingredients really well with a fork until it's one consistency.
  4. 4Cut one large piece of whole grain bread (or two smaller pieces) into small cubes.
  5. 5Add the bread cubes to the coffee mug and mix until all bread cubes are coated in the liquid.
  6. 6Microwave on high for one to two minutes, keeping an eye on it until it puffs up and comes over the edge of the mug.
  7. 7Carefully remove the mug from the microwave.
  8. 8Add desired toppings such as extra peanut butter, cinnamon, or mashed frozen strawberries.

Ingredients

  • 1 egg
  • 1.5 tbsp milk
  • 1 tbsp peanut butter
  • 0.25 tsp vanilla extract
  • 1 tsp maple syrup
  • 0.25 tsp cinnamon
  • 1 pinch baking powder
  • 1 large piece whole grain bread

Equipment

Tips

  • Use an oversized mug or a larger ramekin as the French toast will puff up.
  • Use whole grain, higher fiber bread, which will also likely mean it's higher in protein.
  • Keep an eye on it when microwaving; it's done when it starts to puff up and come over the edge of the mug.
  • Be careful as the mug may be hot when pulling it out of the microwave.
  • Add desired toppings like extra peanut butter, cinnamon, or mashed frozen strawberries.
