Sushi Inspired Stuffed Salmon

Directions

  1. 1Preheat oven to 400 degrees Fahrenheit.
  2. 2Butterfly the salmon.
  3. 3Brush the inside and outside of the salmon with 1/3 cup of teriyaki.
  4. 4In a small bowl, mix the kewpie mayo and wasabi together.
  5. 5In a medium-sized bowl, mix the cooked sushi rice, rice wine vinegar, salt, sesame oil, and avocado oil.
  6. 6Spread the wasabi mayo mixture inside the salmon.
  7. 7Fill the inside of the salmon with the seasoned sushi rice.
  8. 8Close the salmon, brush with more teriyaki sauce, and top with thin lemon slices.
  9. 9Bake for 17 minutes.
  10. 10Remove the lemon slices and garnish with black sesame seeds, tobiko, and chopped parsley.

Ingredients

  • 1 whole salmon tail
  • 1/3 cup teriyaki sauce
  • 1 whole lemon
  • 3 tbsp kewpie mayo
  • 1 1/2 tbsp wasabi
  • 2 1/2 cup sushi rice
  • 2 tbsp rice wine vinegar
  • 1/2 tsp salt
  • 2 tsp sesame oil
  • 1 tbsp avocado oil
  • 1/3 cup teriyaki sauce
  • 1 none corn starch slurry
  • 2 tbsp black sesame seeds
  • 1/2 cup tobiko
  • 2 tbsp parsley

Tips

  • You can ask your local fishmonger to butterfly the salmon for you.
