1Prick your sweet potato with a fork, rub with a little salt and olive oil and airfry / bake for approx 45 mins at 180C or until soft.
2Season your sirloin with 1 tbsp olive oil, salt and pepper and set aside (needs to reach room temperature before cooking).
3Make a chimichurri sauce using approx 3 tbsp olive oil, 1 tbsp red wine vinegar, 1 minced garlic cloves, 1/4 chopped chilli and a handful of finely chopped parsley and coriander.
4Get your pan nice and hot ready to cook your steak. Sear for around 2 mins per side on a high heat for a pink steak, basting with butter and fresh garlic after flipping. Leave steak to rest for around 10 mins.
5Serve mashed sweet potato onto a plate.
6Add green beans to the same pan you cooked your steak to soak up the flavor. Add a little extra garlic, salt and pepper to taste and fry for around 5-7 mins until slightly charred and cooked through.
7Slice the cooked steak into strips and place them on the plate.
8Grate parmesan cheese over the green beans.
9Spoon the chimichurri sauce over the sliced steak.
