1Make the pie crust and chill; preheat oven to 425˚F.
2Make the filling: Melt butter in a saucepan, whisk in flour, simmer 1 minute, whisk in water and sugar, bring to a boil, simmer 3 minutes, remove from heat.
3Prepare apples: peel, core, slice; toss with cinnamon; pour sauce over apples and stir.
4Roll out bottom crust, transfer to pie plate, add apple mixture.
5Roll out top crust, cut into strips, create lattice top; brush with egg wash.
6Bake at 425˚F for 15 minutes, then reduce heat to 350˚F and bake for another 45 minutes, until apples are soft and filling is bubbling. Rest at room temperature for 1 hour before serving
