Cowboy Caviar Bean Salad

Directions

  1. 1Add one can of drained chickpeas into a large bowl.
  2. 2Add one can of drained and rinsed black beans into the bowl with chickpeas.
  3. 3Chop two cucumbers and add them to the bowl.
  4. 4Add cherry tomatoes to the bowl.
  5. 5Chop and add a whole pack of mozzarella pearls to the bowl.
  6. 6Chop and add half of a red onion to the bowl.
  7. 7Add kalamata olives to the bowl.
  8. 8Add banana peppers to the bowl.
  9. 9Chop fresh parsley and throw on top of the salad ingredients.
  10. 10For the dressing, add olive oil into a measuring cup.
  11. 11Add red wine vinegar to the measuring cup.
  12. 12Add banana pepper juice to the measuring cup.
  13. 13Add Dijon mustard to the measuring cup.
  14. 14Add a little bit of maple syrup to the measuring cup.
  15. 15Mix the dressing ingredients using a frother.
  16. 16Pour the dressing over the salad ingredients in the bowl.
  17. 17Mix all ingredients together until well combined.

Tips

  • For the dressing, you can use a whisk or a fork if you don't have a frother. The salad gets better throughout the week as it marinates in the fridge. You might also want to add some corn. Other good things to add are bell pepper, jalape jao, feta, avocado, and lime juice. Some people might prefer cilantro instead of parsley.
  • It's super nutritious and no cooking is required. You can put it in a container and it sits in the fridge marinating getting better throughout the week.
