Season pork chops on both sides with salt, pepper, paprika, and thyme.

Heat olive oil in a large skillet over medium-high heat.

Sear pork chops 3–4 minutes per side until deeply golden. Remove and set aside.

In the same skillet, add potatoes and onions. Cook 6–8 minutes, stirring occasionally, until lightly browned.

Add garlic and cook 30 seconds until fragrant.

Pour in chicken broth, add butter and Dijon mustard. Stir to combine.

Return pork chops to the skillet. Reduce heat to medium-low, cover, and simmer 15–18 minutes until pork is cooked through and potatoes are tender.

Spoon sauce over the chops and garnish with fresh herbs before serving.

2 tbsp olive oil
1 lb baby potatoes, quartered
1 small onion, cut into wedges
3 cloves garlic, minced
1 cup chicken broth
2 tbsp butter
1 tsp Dijon mustard
Fresh thyme or parsley, for garnish
