Skillet Pork Chops with Garlic Potatoes

Directions

  1. 1Season pork chops on both sides with salt, pepper, paprika, and thyme.
  2. 2Heat olive oil in a large skillet over medium-high heat.
  3. 3Sear pork chops 3–4 minutes per side until deeply golden. Remove and set aside.
  4. 4In the same skillet, add potatoes and onions. Cook 6–8 minutes, stirring occasionally, until lightly browned.
  5. 5Add garlic and cook 30 seconds until fragrant.
  6. 6Pour in chicken broth, add butter and Dijon mustard. Stir to combine.
  7. 7Return pork chops to the skillet. Reduce heat to medium-low, cover, and simmer 15–18 minutes until pork is cooked through and potatoes are tender.
  8. 8Spoon sauce over the chops and garnish with fresh herbs before serving.
