Uppad Pachil Da Rotti

Directions

  1. 1Soak uppad pacheer in water for 3-4 hours, then wash to remove excess salt.
  2. 2Soak short-grained rice for 2-3 hours.
  3. 3Drain water from the rice and add all ingredients (rice, dry red chilies, coriander seeds, grated coconut, uppad pacheer) to a mixer jar.
  4. 4Grind the mixture in small batches without adding water until it forms a smooth paste.
  5. 5Taste the paste for salt and adjust if necessary, also adjusting jackfruit quantity as preferred.
  6. 6Take a clean banana leaf and gently press a small ball of the dough onto it, forming a flat disc.
  7. 7Flip the pressed dough onto a cast iron pan.
  8. 8Slow cook the rotti, applying ghee from time to time, until golden and cooked through.
  9. 9Serve hot.

  • 1 cup rice (short-grained)
  • 10 dry red chili (mix of Byadgi and Gundu)
  • 1 tablespoon coriander seeds
  • 1 handful grated coconut
  • salt
  • ghee

Tips

  • Slow cooking is key to ensure the rotti cooks through.
  • Adjust salt as uppad pachil is already salty.
  • Add more or less jackfruit depending on preference.
