Maple Orange Glazed Chicken

Directions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2Pat the chicken dry and season with salt, pepper, and dried thyme.
  3. 3Arrange the chicken skin-side up in a lightly oiled 9x13 inch baking dish and drizzle with olive oil.
  4. 4Place it in the oven and bake for 20 minutes.
  5. 5While the chicken cooks, prepare the glaze by whisking the maple syrup, orange juice, orange zest, soy sauce, Dijon mustard, and garlic in a saucepan.
  6. 6Bring the glaze to a simmer over medium heat and cook for 3-4 minutes until slightly thickened, then remove from the heat.
  7. 7After 20 minutes, brush the chicken with half of the glaze and return to the oven for 15 minutes.
  8. 8Brush again with the remaining glaze and bake for another 5-10 minutes, or until the chicken reaches 165°F (74°C) and the skin is caramelized.
  9. 9Serve hot with orange slices and thyme.
